Kosher Bison with Beer

Bison Shoulder Roast
1 bison shoulder roast (about 8 lbs.)
2 Tbsps. garlic powder
2 Tbsps. freshly ground black pepper
2 Tbsps. soy sauce
2 Tbsps. brown sugar
1 bottle dry red wine
1 1/2 cups beer
2 medium onions, sliced
Rub the garlic powder, pepper, soy sauce and sugar onto the meat.
Place in a non-metallic bowl.
Pour the wine and beer over the roast. Scatter the sliced onions around it. Marinate in the refrigerator overnight.
Place the meat and marinade in a covered baking dish.
Roast uncovered for 3 hours at 300°.
Let the roast stand for about 20 minutes before slicing and serving.
Serves 12 to 14.
