That’s right! And if you go to Jewish Exponent, you can also get info on kosher venison. Maybe try some He’Brew Beer from the Shmaltz Brewing Company as part of the marinade.

Bison Shoulder Roast

1 bison shoulder roast (about 8 lbs.)
2 Tbsps. garlic powder
2 Tbsps. freshly ground black pepper
2 Tbsps. soy sauce
2 Tbsps. brown sugar
1 bottle dry red wine
1 1/2 cups beer
2 medium onions, sliced

Rub the garlic powder, pepper, soy sauce and sugar onto the meat.

Place in a non-metallic bowl.

Pour the wine and beer over the roast. Scatter the sliced onions around it. Marinate in the refrigerator overnight.

Place the meat and marinade in a covered baking dish.

Roast uncovered for 3 hours at 300°.

Let the roast stand for about 20 minutes before slicing and serving.

Serves 12 to 14.
